When warmer days come around, I crave salads more than anything! It seems easier to consume fresh fruits and veggies in Summer compared to the harsh, colder months. One of the reasons I think this is true is that when it’s hot out, lighter meals feel more appetizing. For that reason, some of the ingredients I always have on hand are the following:
- Cherry Tomatoes
- English Cucumbers
- Green Beans
- Mixed Greens or Romaine Lettuce
I try to have mixed greens or romaine lettuce on hand at all times. I want to be able to toss a few simple ingredients together within 10-15 minutes. When I make a salad, I focus on textures. If I have mixed greens, I will chop up some cucumbers and then flake in goat cheese, corn, and some blanched green beans with a light balsamic vinaigrette dressing. Another easy salad idea includes chopped romaine lettuce, halved cherry tomatoes, and finely-chopped broccoli tossed with yogurt ranch dressing for a light but tasty salad. This would pair really well with grilled chicken or fish to complete your Summer meal.
As easy as it is just throw things together and come out with something deliciously healthy, there are times when I am feeling particularly tapped out of salad ideas. That's when I check Food & Wine for ideas. Finding new recipes online helps me get inspired to try new ingredients and venture out when it comes to trying new dressings or herbs. So try something new this week. Anytime you eat something fresh, you are doing your body a favor by consuming foods high in antioxidants and fiber. Antioxidants help fight off cancerous cells and fiber helps you maintain fullness and satiety making it easier to prevent overeating.
Remember, abs are made in the kitchen, so if you want to lose weight this summer, keep finding ways to add chopped veggies to your meals, you won’t regret it!
